Fall means lots & lots of baking! We all LOVE pumpkin, ALL things pumpkin....breads, cookies, cakes, cheese cakes & so on. My father loved to cook, especially for Thanksgiving & Christmas. He would make the most scrumptious pumpkin pies & cheesecakes. The cheesecake was only made in November & only on Sundays when he had all that time to do it all from scratch. My mother, sister, & I literally waited hopping from foot to foot at the edge of the kitchen for it to come out of the oven & cool down to eat as our after dinner dessert. I cannot remember the dinners those nights, but I vividly remember those cheesecakes.
 
This bar is my nod to that beautiful childhood memory. It smells just like what my Dad cooked.
